Mr. B's My Favorite Blueberry Cake

Tomorrow our office will be closed.  Another day off work, although I must log in from home, but can only do so much.  They say ten inches of snow.  We have already had forty seven inches of snow this winter, our average is usually thirteen inches of snow and last year we only had six inches.

Every morning I get in the car and the temperature hovers between 10 and 15 Fahrenheit, I know not as bad as some places, but we have had some crazy warm winters for several years where it has been around 50 and 60 Fahrenheit.

The snow and constant cold though is not bad for the garden.  Although when this lot melts I'm sure there will be flooding.

Last week we had a snow storm on Monday followed by an ice storm on Wednesday and some people in our area still do not have electric seven to eight days later.  So that's my weather forecast from Philly Area, PA.  Brits like to talk about the weather.

Now here is something nice to make on a snowy day.


Mr B. came across a nice deal on blueberries at the supermarket, not quite sure why blueberries would be a good deal at this time of year in the northern hemisphere, must be coming in from somewhere else.  So looked for a recipe to use them in and this is what he came up with from one of our favourite cook books  Fix-It and Enjoy-It Cookbook by Phyllis Pellman Good.


My Favorite Blueberry Cake

1 Stick Butter (1/2 cup) at room temperature
1 Cup plus 2 Tbsp sugar divided
1 Cup plus 1 Tbsp of flour divided
1 tsp baking powder
1/2 tsp salt
2 Eggs
3 Cups fresh blueberries
2 Tbsp freshly squeezed lemon juice
Confectioners sugar

1.  In a large bowl, cream the butter with 1 cup sugar until light and fluffy.
2.  In a bowl mix together 1 cup flour, baking powder, and salt.  Beat into the butter mixture.
3.. Beat in the eggs, one at a time.  This will be a stiff batter.
4.  Place batter into a lightly buttered 9" spring form pan.
5.. Toss berries with 2 tablespoons sugar, lemon juice, and 1 tablespoon flour (if using frozen berries do not thaw them.  And increase the amount of flour to 2 -3 tablespoons.  Spear evenly over top of batter.
6.  Bake 1 hour at 350 degrees f. (Frozen berries may require more than an hour).  Check that the cake is done by inserting a toothpick into the centre.  It will come out clean if the cake is fully baked.
7.  Cool cake in pan.  Remove sides of pan and move onto a cake plate, berry side up.  Sprinkle lightly with confectioners sugar (icing sugar) when serving.


This is delicious.

The Boy liked it so much that it was pretty much gone in 24 hours, so Mr. B. bought more blueberries still on sale for another one.

  1. We have had a peculiar winter. After a few hard winters, this year has been mostly mild but WET. I feel cheated as no snow but I expect you are fed up with it. The cake looks delicious. I've noticed blueberries reduced in supermarkets this past week but not terribly cheap. Enjoy your day at home!

  2. I like this recipe...now if I can find a good deal on blueberries! We also like to talk about the weather in Texas...laughing.
